Aligoté is one of France’s unsung heroes of white wine. Always playing second-fiddle to its famous cousin Chardonnay, Aligoté nevertheless produces dry, delicate wines in the chalky soils of Burgundy and is a great wine to pair with food, particularly soft cow’s milk cheeses and fish dishes.
