Palomino Fino is a white grape hailing from Andalucia, Spain. Due to its naturally high sugars (and therefore alcohol), Palomino Fino’s most famous use is in the production of sherry. Legend says the grape is named after a knight who helped defeat the Moorish occupation of Andalucia in the 13th Century.
